Pão Fit - Air Fryer Sweet Potato Flour Bread

Sometimes the best recipes come from customers.
This one is from @diariosdenossafamila, who has been making it with our sweet potato flour. It's a small savory loaf, gluten-free, and it goes in the air fryer for under twenty minutes. Six ingredients, one bowl, no rising time, no kneading.
The sweet potato flour gives it a soft crumb and a gentle sweetness that plays nicely against the salt and seeds. Good warm, good the next morning, and it makes about enough for four people.

Ingredients
  

  • ½ cup 65 g Nobis sweet potato flour
  • ½ cup 50 g oat flour certified gluten-free, if that matters to you
  • tsp baking powder
  • ½ tsp salt or to taste
  • 2 large eggs
  • 2 tbsp olive oil optional, but it keeps the loaf softer
  • 1 tbsp mixed seeds for the top sesame, sunflower, pumpkin or flax

Method
 

  1. Set out 4 mini silicone pie molds. No greasing needed — silicone releases on its own.
  2. In a bowl, stir together the sweet potato flour, oat flour, baking powder and salt.
  3. Crack in the eggs and add the olive oil. Mix until smooth with no dry pockets of flour. The batter will be loose and pourable, like a cake batter — that's how it should look.
  4. Divide the batter between the molds, filling each about two-thirds full. They rise. Scatter the seeds over the tops and press lightly so they stay put.
  5. Place the molds in the air fryer basket with space between them so the air can circulate. Air fry at 320°F / 160°C for 15–20 minutes. Start checking at 15. They're done when the tops are golden and a toothpick comes out clean.
  6. Let them cool 5 minutes before turning out. They firm up as they cool.

Notes

The batter is loose, and that's normal. This isn't a dough you knead or shape. It pours. If yours looks thin, it's right.
Don't crowd the basket. The molds need space between them or the ones in the middle come out pale and underdone.
The seeds brown before the bread does. If they're getting dark, lay a small piece of foil loosely over the tops for the last few minutes.
Every air fryer runs differently. Check at 15 minutes, especially the first time.
Make it your own. Herbs, garlic powder, grated cheese or black pepper all work stirred into the batter.
Keeping them. Best the day you make them. They keep 2 days in an airtight container, and a few minutes back in the air fryer brings them right back.
Are they gluten-free? Yes, as long as your oat flour is certified gluten-free. Oats don't contain gluten but are almost always milled alongside wheat.
