Why nobis
What it is
Rubissol sweet potato, and nothing else.
Rubissol is a sweet potato with red skin and cream flesh, naturally sweet and floury. Small farmers in Paraná, in the south of Brazil, grow it. It is cut, dried and milled into flour. Nothing is added.
As a dietitian, I look for foods that keep me going. This flour makes the fluffiest gluten free pancakes, and with its fiber they keep me full all morning.
My favorite topping is a blueberry, lemon and maple syrup sauce. So good!
