Nobis Green Muffins
Fluffy, moist, and packed with a sneaky boost of nutrients from ora-pro-nobis powder, a leafy green superfood high in protein, fiber, and antioxidants. You can make them with chocolate chips, blueberries, or both!

Ingredients
- 2 cups all-purpose flour
- 1 cup fat-free Greek yogurt (or plant-based yogurt)
- 3/4 cup chocolate chips or blueberries (or split batter for both)
- 1/2 cup milk (or plant-based milk)
- 1/2 cup butter (or vegan butter/neutral oil)
- 1/2 cups cane sugar organic cane sugar is best
- 1 egg (or flax egg: 1 tbsp flax + 3 tbsp water)
- 2 tbsp ora-pro-nobis powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1/2 tsp salt
Method
- Preheat oven to 375°F and prep muffin tin with liners or spray.
- In a large bowl, whisk flour, sugar, baking soda, salt, and ora-pro-nobis powder.
- In another bowl, melt butter. Add yogurt, milk, egg, and vanilla; whisk until smooth.
- Combine wet and dry ingredients; stir just until mixed.
- Divide batter in two bowls if using both fillings. Fold in chocolate chips to one half, blueberries to the other.
- Fill muffin cups almost to the top. Bake 15–17 min or until a toothpick comes out clean.
- Cool slightly and enjoy!
