Nobis Green Muffins

Fluffy, moist, and packed with a sneaky boost of nutrients from ora-pro-nobis powder, a leafy green superfood high in protein, fiber, and antioxidants. You can make them with chocolate chips, blueberries, or both!

Ingredientes
  

  • 2 copos all-purpose flour
  • 1 xícara fat-free Greek yogurt (or plant-based yogurt)
  • 3/4 xícara chocolate chips or blueberries (or split batter for both)
  • 1/2 xícara leite (or plant-based milk)
  • 1/2 xícara butter (or vegan butter/neutral oil)
  • 1/2 copos cane sugar organic cane sugar is best
  • 1 egg (or flax egg: 1 tbsp flax + 3 tbsp water)
  • 2 colher de sopa ora-pro-nobis powder
  • 1 tsp baking soda
  • 1 tsp Extrato de baunilha
  • 1/2 tsp sal

Método
 

  1. Preheat oven to 375°F and prep muffin tin with liners or spray.
  2. In a large bowl, whisk flour, sugar, baking soda, salt, and ora-pro-nobis powder.
  3. In another bowl, melt butter. Add yogurt, milk, egg, and vanilla; whisk until smooth.
  4. Combine wet and dry ingredients; stir just until mixed.
  5. Divide batter in two bowls if using both fillings. Fold in chocolate chips to one half, blueberries to the other.
  6. Fill muffin cups almost to the top. Bake 15–17 min or until a toothpick comes out clean.
  7. Cool slightly and enjoy!
